Mixing with Maggie: Chicken Burrito Dip

GREENVILLE, N.C. (WITN) – Get ready to indulge in a delicious and savory dish brought to you by Maggie Golden in today’s Mixing with Maggie.

This chicken burrito dip is easy to make and easy to enjoy. Here’s what you’ll need.

  • 2 cups shredded rotisserie chicken
  • 1 cup cooked rice
  • 1 (14.5 oz) can black beans, rinsed and drained
  • 1 (10 oz) can enchilada sauce
  • 1 cup corn kernels
  • 1/4 cup sliced green onions
  • 2 teaspoons ground cumin
  • 1/2 cup sour cream
  • 2 1/2 cups cheddar cheese, divided


  • Preheat oven to 350 degrees.
  • In a large bowl, combine all of the ingredients except the cheese. Stir in 1 ½ cups of the cheddar cheese.
  • Pour the mixture into a pie plate or another small cooking dish.
  • Sprinkle the remaining cheese on top.
  • Bake for 15-20 minutes or until the cheese is melted and the dip is hot and bubbly.
