Ingredients
- 4 large russet potatoes
- 2 cups cooked pulled pork
- 1/2 cup BBQ sauce, plus more for drizzling
- 1 cup shredded cheddar cheese
- 1/2 cup sour cream
- 4 tablespoons butter
- 1/4 cup sliced green onions
- 1/4 cup cooked and crumbled bacon
- Salt, to taste
- Black pepper, to taste
Instructions
1. Bake the Potatoes Preheat the oven to 425°F. Scrub the potatoes, pat them dry, and prick each several times with a fork. Place them directly on the oven rack and bake for 45–60 minutes, or until tender when pierced with a fork.
2. Warm the Pulled Pork While the potatoes bake, combine the pulled pork and 1/2 cup BBQ sauce in a saucepan over medium-low heat. Stir occasionally until the pork is heated through and coated in sauce.
3. Prepare the Potatoes Remove the potatoes from the oven and carefully slice a deep slit down the center of each one. Gently squeeze the ends to open the potatoes, then season the insides with salt and black pepper.
4. Add the Butter and Cheese Place 1 tablespoon of butter inside each potato and sprinkle with shredded cheddar cheese. Return the potatoes to the oven for 2–3 minutes, until the cheese is melted.
5. Load the Potatoes Top each potato generously with BBQ pulled pork, followed by a spoonful of sour cream, crumbled bacon, and sliced green onions.
6. Drizzle and Serve
